FOOD
Tomato & Endive Salad
Ingredients:
2 heads Belgian endive
4 medioum tomatoes
1 small head romaine lettuce
8 pitted black olives, (halved)
2 tablespoons chives
Vinaigrette dressing
Instructions:
- Wash, trim, and cut the endive into 3/4 inch slices. Wrap in plastic wrap and put in the refrigerator.
- Dip the tomatoes into boiling water for 5 seconds and peel off the skins with a knife. Wrap and chill.
- Wash the romaine lettuce, dry thoroughly. Line a shallow salad bowl with broken pieces of lettuce, cover the bowl and chill.
- Chop the chives and prepare the vinaigrette dressing. Cover and keep dressing at room temperature.
To serve:
- Scatter the endive slices over the lettuce in the salad bowl.
- Quarter the tomatoes and arrange on top of the endive.
- Sprinkle the olive halves and the chopped chives over the salad.
At the table, show off the salad - then toss with the dressing.
