The Neue Galerie is presenting a very special exhibition in honor of the tenth anniversary of the founding of the museum. “The Ronald S. Lauder Collection" is the extraordinary collection of Neue Galerie co-founder Ronald Lauder and this exhibition provides a rare glimpse into one of the finest private art collections of the world.

The Ronald S. Lauder collection encompasses a broad range of masterworks. The exhibition focuses on six areas: medieval art, arms and armor, Old Master paintings, 19th- and 20th-century drawings, fine and decorative art of Vienna 1900, and modern and contemporary art. Among the artists represented are Joseph Beuys, Constantin Brancusi, Paul Cézanne, Vasily Kandinsky, Anselm Kiefer, Gustav Klimt, Henri Matisse, Pablo Picasso, and Gerhard Richter.

Renee Price, the museum's director, planned this show to honor the 10th anniversary of Neue Galerie New York. She says, the founding of the museum started in the mid-80s, when Ronald S. Lauder and the late Serge Sabarsky began discussing a museum for German and Austrian art to be located in New York City and using their two collections as the foundation.  This exhibition of Ronald Lauder's collection, does go outside of the museum's stated mission, but it so clearly displays the co-founder's passionate interest in all of art history and his absolute instinctual dedication to quality, which he has brought to all aspects of the Neue Galerie.

Price goes on to say, Ronald S. Lauder has the vision and temperament to identify greatness in art very quickly, plus the conviction and courage to acquire masterworks when available. This show honors his endless art quest and these artworks speak to the best qualities of human endeavor.

"Many years ago, I read a book by Pierre Cabanne called The Great Collectors. In his text, Cabanne describes the collector’s impulse as a kind of addiction. I must confess that I have been afflicted with this addiction right from the start. My absolute love for and dedication to collecting art has been one of the guiding passions of my life.

It is impossible for me to imagine my life without my works of art.... I owe a special debt of gratitude to one of my mentors, the late Serge Sabarsky. In the ten years before Serge died, we shared the dream of one day creating a museum together. Though Serge did not live to see this dream realized, I like to think that what the Neue Galerie has become, with its quality and dedication to excellence, would have fulfilled his expectations and made him happy....

...Although it was not possible to place every item in my collection on display here, the key works in each field are represented. It is my hope that visitors will stroll into the Neue Galerie during this show and be as inspired as I was, such a long time ago in this great city."

FOOD
SALMON SOUFFLE
with Riesling Cream Sauce
(To be served with a fine Austrian or German Riesling wine)
Salmon Souffle with Riesling Cream Sauce,
Puff Pastry and Tomato Aspic.

Ingredients for 8 People:
  • 4.5 pounds whole salmon
  • 5.3 oz butter
  • 11/4 cup of fish stock
  • 1/2 bottle of Riesling white wine
  • 4 shallots
  • 11/4 cup of cream (very cold)
  • 1/2 lemon, juiced
  • Salt and pepper

For Stuffing:
  • 3.5 oz Whipping Cream
  • 8.2 oz ground white fish meat
  • 2 eggs
  • 2 1/2 tsp salt
  • pinch of Pepper, pinch of Nutmeg

Directions:
Cut salmon into fillets without skin
Cut the fillets into 8 sections / medallions.
For the filling, put the ground fish meat into a food processor, add chopped shallots, eggs, 1/2 tsp. salt, 1/2 tsp. white pepper, several grates of nutmeg and eggs. Blend and add the very cold cream gradually. (Cook a small lump in a pan for a minute or less and taste for seasoning.)
Remove the stuffing and place in a bowl -(while making whipped cream, keep stuffing in the refrigerator).
Whip 3.5 oz of whipping cream.
Fold whipped cream into the stuffing, using a spatula.
Coat each medallion with stuffing by shaping a smooth dome around the salmon.
Place the coated salmon medallions in a buttered baking dish, salted and strewn with chopped shallots.
Pour the Riesling and the fish stock into the dish around the medallions.
Simmer in the oven for 15 to 20 minutes on medium to low heat or until the souffle is golden brown and the Riesling / fish stock has evaporated.
Remove the salmon souffles and keep warm.

The Sauce
(The sauce may be made ahead or while the fish is in the oven.)
In a sauce pan, pour 1/2 cup of cream, 1/4 cup of fish stock and 1/4 cup Riesling. Heat on the stove top, add salt & pepper to taste and reduce, stirring regularly. 
When sauce is simmering but not boiling, add 1/2 stick of cold butter slowly in small pieces, continue stirring and reducing until thickened (do not allow to boil). 
Finally stir in the fresh lemon juice, taste and adjust for seasoning.

On the serving plate, spoon the sauce around the base of salmon souffle. Serve with tomato confetti aspic and garnished with a puff pastry shape and a parsley sprig on the aspic.

Tomato Confetti Aspic

INGREDIENTS:
1-3oz lemon gelatin
1 package unflavored gelatin
1 cup boiling water
1 10 3/4 oz can tomato soup
1 lemon, juiced
3 ribs celery, finely chopped
2 oz slivered almonds
1/4 cup chopped green pepper
1/4 cup chopped onion
7 shakes of Tobasco pepper sauce
Salt & Pepper

DIRECTIONS:
Dissolve gelatin in boiling water.
Add soup and lemon juice.
Cool mixture.
Then fold in remaining ingredients.
Taste for seasoning. 
Pour into a mold and chill until formed.

RONALD S. LAUDER
a short biography
Ronald S. Lauder
Ronald Steven Lauder (b. February 26, 1944) is an American businessman, civic leader, philanthropistart collector and #103 on the Forbes 400 list in 2011. Lauder was born in New York City, the son of Estée Lauder and Joseph Lauder, founders of Estée Lauder Companies, and the younger brother of Leonard Lauder, chairman of the board of the Estee Lauder company. He attended the Bronx High School of Science and holds a Bachelors degree in International Business from the Wharton School of the University of Pennsylvania.

He studied at the University of Paris, and received a Certificate in International Business from the University of Brussels. He is married to Jo Carole Lauder and has two children, Aerin and Jane. Lauder started to work for the Estee Lauder Company in 1964. In 1984 he became a Deputy Assistant Secretary of Defense for European and NATO policy at The Pentagon. In 1986 Ronald Reagan named him as the US ambassador to Austria, a position he held until 1987. 

Lauder made a bid to become the mayor of New York City in 1989, losing to Rudy Giuliani in the Republican primary. He also led a movement for term limits on the New York City Council, which won a citywide referendum in 1993. Although, three years later, New Yorkers reversed their decision and voted down a council proposal to extend the limits. 

On November 16, 2001, Lauder opened the Neue Galerie in New York City (an art museum dedicated to art from Germany and Austria) across 5th Ave. and a block uptown from the Metropolitan Museum of Art. It has one of the greatest collections of works by Egon Schiele among its many other masterworks. On June 18, 2006, he purchased Portrait of Adele Bloch-Bauer I by Gustav Klimt for $135 million from Maria Altmann and her family. Lauder did not mind paying the Altmanns the highest price ever for a painting (at that time) because the picture had been looted by the Nazis and had recently been returned to the Altmann family, following years of negotiation and litigation with the Austrian government. The painting now forms the centerpiece of the Neue Galerie's collection. Lauder also has the unusual status of personally having the world’s largest private collection of medieval and Renaissance armor.

Lauder has for many years been involved in environmental conservation efforts in eastern Long Island and has served on the board of directors of the conservation organization "Group for the East End" since 2002. He is also an honorary trustee of the World Monuments Fund, a New York-based non-profit with the mission of protecting endangered cultural heritage sites around the world.
