Affordable Art Fair’s mission is to promote emerging artists and make contemporary artwork affordable and accessible to all. The AAF believes that art fairs are the true heart of the art world, as they are the only place where galleries, collectors, curatorial professionals and visitors come together in one place, all learning from each other and exposing the currents flowing through the international art market.

FOOD
Fire & Ice Salad

This healthy-fresh melange of chilled fresh vegetables is heated up by a salsa based, warm, dressing. The temperature contrasts adds dimensions to the salad, above and beyond the great flavors.

Ingredients:
1 ripe avocado, peeled, seeded and cut into cubes
1/4 cup lime juice
2 large tomatoes cut into cubes
1/2 onion thinly sliced and separated into half rings
1 cup small cauliflowerets (ends)
1 small green pepper, diced
1/3 cup of PACE medium salsa
1/4 cup water
1 tablespoon sugar
1/2 teaspoon basil, crushed

Directions:
Gently toss avocado in 2 tablespoons of lime juice to coat thoroughly. Sprinkle the cubes of tomatoes, avocado and onion slices over the top. Cover with plastic wrap and chill for 1 to 2 hours. 

Dressing - Combine the salsa, water, sugar, basil and 2 tablespoons of lime juice in a small sauce pan. Bring to a boil, stirring until the sugar is dissolved. 

To Serve - Dish up the cold salad into chilled salad bowls or plates. Pour the hot dressing over each cold salad. 

Serves 6 to 8 servings.
